Tasty Thursday:Chicken or Shrimp Cappellini

I believe that this is a Rachel Ray recipe, it’s super yummy!
Chicken Cappellini aka Chicken Spaghetti

This is what you need:
1 pound chicken or shrimp (we use chicken)
1 Tbs salad oil
1 medium onion, chopped
1/2 green pepper, chopped
1 garlic clove, pressured
1 can (8oz) tomato sauce
1/2 can Rotel
1/4 tsp paprika
1/4 tsp thyme
1/4 tsp salt
1/4 tsp pepper
Cappellini noodles or thin spaghetti noodles
1) In 2-quart bowl, add oil, onion, green pepper and garlic. Cover bowl with wax paper and put in microwave on high for 2 minutes
2) Add remaining ingredients (except pasta), cover with wax and microwave on high for 4 minutes.
3) Stir and then microwave for another 2 minutes.
Serve over spaghetti (we used regular sized spaghetti)
