I think that a lot of us are very busy Moms. I know that I am and that is why I am drawn to things that are easy and simple. I think that one reason why I really like casseroles. There are easy and simple but are so yummy.
One of my favorite things about casseroles is that you can prepare that before hand and then just stick them in the over 30 minutes before dinner. I don’t know about at your house, but at our house things get CRAZY after the kids get home from school. It’s like a tornado hits me house every day at 4, it gets loud and messy. The kids are hyper, they want to play but they need to do their homework. It’s just chaos. And of course that is the time that I need to start thinking about cooking dinner.
That’s what I love about casseroles, if you think about it earlier in the day (sometimes I just plain forget), you can prepare it all and then just stick it in the fridge (or even the freezer if you’re really thinking ahead) and then pop it in the oven when you’re ready to cook dinner.
Casseroles are also awesome when you take a meal to someone. So many times after having a baby, they bring over a meal at the time they eat dinner. 6:30 or so. I’m grateful for the meal, but we eat at 5 or 5:30, so by then my kids are starving. Casseroles are great to bring because you can give them to the person in the afternoon and they can cook it whenever they are ready for dinner.
Can you tell I like casseroles? Well I do! And I wanted to share a super yummy one too 🙂
This is what you’ll need:
8-10 potatoes
1 1/2 cups cheddar cheese
3/4 cup evaporated milk
1/2 cup sour cream
10-15 strips bacon
1/4 cup butter
2-3 green onions chopped
Salt and pepper to taste
This is how you make it:
1) Peel and cube the potatoes and then boil them in water for 30 minutes.
2) Drain potatoes and then add milk, sour cream, salt, pepper and butter. I substituted my butter with Country Crock spread. Mix with mixer or potato masher
3) Add half of the cooked bacon, crumbed, and 1 cup cheese into the potatoes.
4) Place potatoes into a greased casserole dish. Then add the rest of the bacon, cheese and green onions.
5) Bake at 350 degrees for 20 minutes
