Apricot-Pineapple Ham #eMealstotheRescue

I am not the best at planning meals.  I try hard to plan our menu every week but lately it hasn't happened.  So when it comes time for dinner, I don't know what to cook.  There have been times that come up with something to cook but then not have the ingredients for it.  So we then have cold cereal or peanut butter and jelly sandwiches.  Every once in awhile it is fun to have cereal but 2 to 3 times a week probably isn't great....  Thank goodness for eMeals, #eMealstotherescue.  It is where I got this amazing apricot-pineapple ham recipe from.

eMeals is website that was started by busy moms just like me and you.  They were having the same problems with getting dinner on the table, so they did something about it and came up with eMeals.
What you do is, you get a subscription and then you get to pick what kind of plan you want.  I went with the classic food plan but there other kinds like gluten free, clean eating, low carb and more.  You put in the number in your household and then pick the grocery store that you shop at and then it does the rest!  You get a weekly email with 7 meals on it.  Plus there is a detailed grocery shopping list, it even shows you what is on sale that week at your store and it categorized by foods.  It seriously is so awesome!  Plus the recipes look so good, like real people food with real people ingredients, ones that you actually have in your cupboards.

I printed out my first weekly plan and I made the Pineapple-Glazed Ham.  This is what you'll need for it:
5 lbs boneless ham
1 cup apricot-pineapple preserves
3/4 cup packed brown sugar
1/2 cup spicy brown mustard
1/4 cup orange juice

1) Mix all the preserves, mustard, juice and brown sugar together.
2) Slit the ham in a diagonal pattern
3) Place ham in crock pot and pour the mixture over it and cook on low for 8 hours.

The ham was so amazing, tender, juicy and had a great flavor.  My kids loved it and ate it all up.  I love how easy it was.  It took me about 10 minutes to get everything in the crock pot.

I paired it with funeral potatoes and rolls and it was a delicious meal.

For me, coming up with different meals every week is the hardest.  I'll ask my husband what sounds good and he usually says the same things every week, spaghetti, wraps, pizza.  I get bored of the same things over and over again.  So eMeals is great because you get new meals each week.  I won't always cook all the meals each day, I can't handle a big meal every day (it's too much food).  But it's nice to have the recipes there.  I'll print them out and then keep them in my recipe book.

Another thing that is awesome about the meal plans is that the recipes work well with each other.  For example, in my plan this ham was for day 3.  Day 4 and 5 were meals that also had ham in them, so you get to use the left overs from the ham and put it towards another meal.  Saving time and money.  It's genius!

Ham, potatoes, and rolls sound so good right now. I love the emeals idea but I think I need the things real people don't eat like goat cheese in my meals.
