I am not the best at planning meals. I try hard to plan our menu every week but lately it hasn’t happened. So when it comes time for dinner, I don’t know what to cook. There have been times that come up with something to cook but then not have the ingredients for it. So we then have cold cereal or peanut butter and jelly sandwiches. Every once in awhile it is fun to have cereal but 2 to 3 times a week probably isn’t great…. Thank goodness for eMeals, #eMealstotherescue. It is where I got this amazing apricot-pineapple ham recipe from.
I printed out my first weekly plan and I made the Pineapple-Glazed Ham. This is what you’ll need for it:
5 lbs boneless ham
1 cup apricot-pineapple preserves
3/4 cup packed brown sugar
1/2 cup spicy brown mustard
1/4 cup orange juice
1) Mix all the preserves, mustard, juice and brown sugar together.
2) Slit the ham in a diagonal pattern
3) Place ham in crock pot and pour the mixture over it and cook on low for 8 hours.
I paired it with funeral potatoes and rolls and it was a delicious meal.
For me, coming up with different meals every week is the hardest. I’ll ask my husband what sounds good and he usually says the same things every week, spaghetti, wraps, pizza. I get bored of the same things over and over again. So eMeals is great because you get new meals each week. I won’t always cook all the meals each day, I can’t handle a big meal every day (it’s too much food). But it’s nice to have the recipes there. I’ll print them out and then keep them in my recipe book.
Another thing that is awesome about the meal plans is that the recipes work well with each other. For example, in my plan this ham was for day 3. Day 4 and 5 were meals that also had ham in them, so you get to use the left overs from the ham and put it towards another meal. Saving time and money. It’s genius!
