3 Ingredient Pumpkin Cookies

I am not a huge fan of pumpkin.  I have been seeing it all over the place lately and it doesn’t sound that good to me.  I like pumpkin bread and pumpkin pie and that’s about it.  Well my sister gave me this recipe and told me that I needed to try it out.  I did.  And they were AMAZING!!  Seriously, so good.  I had to force myself to stop eating them because I could have easily eaten the whole batch.  I don’t know about you, but if it’s in my house, I want to eat it.  So I ended up giving some to our neighbors because they were too good to get rid of them.

All you need for this is 3 ingredients.
1 can pure pumpkin (not pumpkin pie, pumpkin)
1 bag chocolate chips
1 spice cake mix
Makes 24 cookies
pumpkin cookies (1)
1) Mix all the ingredients together
2) Spoon onto a cookie sheet
3) Bake in oven at 350 degrees for 12 minutes.

They are so good.  So soft and moist and just plain good.  I plan on making these whenever I go to a pot luck, so I can enjoy some but not the whole batch.

    I love pumpkin. Pumpkin bread, cheesecake, pie… but never made cookies! Excited…except that I don't use white/wheat flour and regular sugar… not usually a problem as I have tweaked most every recipe… but…do you happen to know if there is a gluten free spice cake out there?!

    this is one of my favorite recipes! Love it! (and I LOVE LOVE LOVE pumpkin…if I could figure out a way to work it into each meal I probably would!)
