Tasty Thursday: Chicken Tortilla soup

Two times a week, we have sports at 4:10. So that means that I either have to have dinner ready and prepped before we go or I have to cook in the crock pot. I love the crock pot, so most of the time, I do that!
My friend has a great cooking blog and I got the recipe there
Chicken Tortilla Soup

This is what you will need:
1 1/2 pounds chicken breats
1 can diced tomatoes
10oz can of red enchilada sauce
1 medium onion, diced
2 cloves garlic
2 cups water
2 cups chicken broth
1 tsp cumin
1 bay leaf
1 tsp chili powder
1 tsp salt
1/4 tsp pepper
10oz frozen corn
Combine all of the ingredients into crock pot and then cook on low for 6 to 8 hours.
Serve with tortilla chips, cheese and cilantro

    Well, this is timely! I'm a "menu" person and already have it planned out but was JUST kind of thinking I wanted something in the crockpot instead–we, too, have sports tonight. I've got other recipes like this but I think I'll give this one a try. Thanks!
