Tasty Thursday: Santa Fe Chicken

Oh how I love crock pot recipes! They are so easy and so yummy!!

This one I got from my friend's recipe blog. If you ever been over there yet, you need to. She is amazing!! She has 4 little kids and her recipes are easy and so yummy! My husband especially liked this recipe!

Santa Fe Chicken

This is what you will need:
chicken breasts
15oz can of black beans, drained and rinsed
1 can Rotel
1 cup frozen corn
1/4 cup cilantro
2 cups chicken broth
3 green onion, chopped
1 tsp garlic powder
1 tsp onion powder
1 tsp cumin
1/2 tsp cayenne pepper
salt
Combine all ingredients in crock pot, placing chicken on top. Cook on low for 6 to 8 hours.

Serve with rice, tortillas, cheese, or sour cream.

Oh I love this recipe! I've been making it for years ever since I came across it on the internet. It is yummy served over rice and then we use the leftovers the next day for tacos like you did! It is really good the next day!

Love this recipe. I found it over on Gina's Skinny Taste awhile back and we make it about once per month. Super easy and so yummy!
