When I was growing up, when I thought about Mexican food, I just thought about tacos. You know, the ones are you have a hard taco shell, taco meat, lettuce, tomatoes, olives and that’s it. I remember the first time I ever went to a Mexican restaurant was in high school and my eyes were opened. I seriously never even heard of an avocado or guacamole until I was in my 20s (crazy huh??) and now I love them on almost everything. Once I moved out of the house and got married, Mexican food became a favorite in our house and something that we have frequently. We love to make Mexican food, especially around Cinco de Mayo. One of our favorite things to have are tacquitos and tacos from Delimex. They are easy to make and so amazing! I made up some pico de gallo and cilantro ranch dressing to go with them and it made an awesome taco bar. This would be a super easy meal to make up for a Cinco de Mayo party!
I headed to Walmart to get the Delimex Taquitos, Tacos and Tamales. I found then in the center aisle freezer section.
I got a few different varieties for our taco bar. We got the Beef & Cheddar Rolled Tacos, Chicken & Cheese Taquitos, and Cheese Taquitos. I also picked up some Beef Tamales because we love them and they make a great lunch for my husband.
I baked the taquitos and tacos, super easy and quick.
I made up some pico de gallo. The base of it is roma tomatoes, cilantro, red onion and lime juice. The amounts vary on how much you like of each ingredient.
This is how I made it:
6 roma tomatoes
1 red onion
1 batch of cilantro, stems removed
Juice from 2 limes
Salt to taste
Chop up all the ingredients and then add all them into a bowl and mix.
This cilantro ranch was a the perfect topper for the taquitos and tacos. It’s amazing!
This is what you’ll need for the cilantro ranch:
1 ranch seasoning package (not buttermilk)
1 cup mayo
1 cup buttermilk
1/2 batch cilantro, stems removed
2-3 tomatillos, diced and unhusked
1 jalapeño, diced
1 clove garlic
Juice from 1 lime
Cut up the ingredients and then throw it into a blender and blend until smooth. You can leave the seeds in the jalapeño if you want it to be spicier. I made it more mild and took the seeds out.
I added a few more toppings: lettuce, cheese, sour cream, guacamole, rice and black beans.
I put the rice and beans on the bottom and then added the taquitos. I then topped it with the sour cream, guacamole, pico de gallo, cheese and then finally the cilantro ranch.
It was soooo amazing!! I loved it and so did my whole family!
I can’t wait to make them up again for Cinco de Mayo!
