This recipe was one of my favorites growing up and it’s still today!! You can use it with chicken or turkey (this would be a great meal to use with left over turkey from Thanksgiving or Christmas)
Chicken Pot Pie:
1/3 cup butter
1/3 cup flour
1/3 cup chopped onion
1/2 teaspoon salt
1/4 teaspoon pepper
10oz frozen mixed vegetables
1 can of chicken broth
2/3 cup milk
2 cup cooked chicken
1 package jumbo biscuits
1) Melt butter over low heat
2) Blend in flour, onion, salt and pepper and cook on low heat until smooth and bubbly
3)Remove from heat
4) Stir in broth and milk, heat to boiling
5) Boil and stir for one minute
6) Stir in chicken and veggies and cook for 8-10 minutes
7) Cover top with jumbo biscuits
8) Bake at 425 degrees for 20-25 minutes
**if using raw chicken, increase step 6 to 15-20 minutes**

I make this frequently, the only thing I do differently is I use Bisquick for the top. I make Bisquick mix in a separate bowl and drop onto the top of the chicken veggie mixture. Turn heat down to low and cook ten mins with lid off and ten with lid on. It makes light and fluffy biscuits on top, just in case you don't have any on hand. Always great and easy.
