School has started and for some reason I thought that life was going to settle down, but now I’m thinking that it may have just gotten busier! I swear that we always running around like crazy during the school year. From going to school, hitting the gym and doing sports, half the time dinner is the last thing on my mind. When I know we are going to have a crazy day, I love to throw something in the crock pot. Some of our favorite crock pot meals are burritos. We throw some kind of meat into the crock pot with some kind of sauce and then we get to put whatever toppings on there that we want. It’s also perfect for entertaining, you can make a lot and it doesn’t take more time. Along with these burritos, we always have to have rice be one of the toppings, it’s always in our pantry and it’s a great staple for burritos.
This is what you’ll need for the crock pot pork burritos:
2-5 lb pork tenderloin or roast
2-3 cans of Rotel
garlic powder (to the taste)
salt and pepper (to the taste)
Add all the ingredients to the crock pot and cook for 6 hours on high.
Here are the toppings that we like to put onto our burritos:
Olives
Cheese
Onions
Sour Cream
Black Beans
Avocados
Tomatoes
Salsa
Because I am always in a rush to make dinner, I turn to Success® rice because they are so easy and don’t make a mess!
