Hi Keeping It Simple readers! I’m Lisa from Wine & Glue. Recently I had a whole gaggle of children over at my house. It was one of those Sundays that comes at the end of a long week and all you want to do is kick back with your friends and chat while the kids play. Well . . . that was the plan when all the children at once started to complain that they were hungry. Crazy kids and their need to eat!
Fortunately, my genius friend and I took one look at the loaf of focaccia on the counter, and came up with this little beauty. It is simple and feeds a gaggle. Exactly the type of recipe I need to have on hand.
Start by cutting your loaf in half. (I’m going to hold your hand through this super complicated recipe because I’m sweet like that.)
Add about 1/4 a cup of jarred pesto to the bottom half.
Add about 10 slices of deli turkey.
Add three slices of provolone cheese.
Pop in a 350 degree oven on a baking sheet (or a pizza stone) for twenty minutes.
Pass out the pieces of steamy sandwich to the gaggle children.
Or quick whip up a box of mac and cheese for them and save the sandwhich as a yummy appetizer for the now drooling adults.
