School is right around the corner for us. For some of you I’m sure that it’s already started. It’s time to start getting into the swing of things and start thinking about lunches. I got this great lunch from Cooking Light Magazine. It’s super yummy and is perfect for a healthy lunch, for you and your spouse or your kids.
I headed to Safeway and got the magazine in the front of the store at the checkouts. The front of the magazine was super appealing to me. You all know that I love quick and easy, so this looked perfect for me. Oh and right now there is a $3 off coupon for this bad boy on just for U portal. I have the Safeway app on my phone, so while I am at the store I can just add the coupons to my card, it’s great! You should go get yours before the coupon expires on 8/30.
I went through the magazine and everything looked so good! That’s what happens when you look through it when you’re hungry :). I was very intrigued by the recipes that use rotisserie chicken. It sounds so simple and yummy!
The recipe that I used was Chicken, Bacon and Blue-Cheese Sandwiches.
This is what you’ll need:
4 slices thick-cut bacon
1/4 cup mayonnaise
2 teaspoons Worcestershire
1 teaspoon Dijon mustard
1 small garlic clove, minced
8 slices crusty white bread, lightly toasted
1/4 cup roquefort or other soft blue cheese, at room temperature
4 leaves romaine lettuce (thick stem ends removed)
8 to 10 oz. meat from 1 whole rotisserie chicken, sliced
8 jarred roasted red peppers
1/2 avocado, cut into 12 thin slices
This makes 4 sandwiches
In a frying pan, fry up the bacon. While that is cooking, mix the mustard, mayo, garlic and Worcestershire in a small bowl. Then spread it on 4 of the toasted slices of bread. On the other four slices, spread 1 tsp blue cheese.
On the bread with the blue cheese, layer 1 piece of lettuce, 1/4 of the chicken, 2 red peppers, 3 slices of avocado and 1 piece of bacon. Cut in half and enjoy!
This would be perfect lunch for your kids or husband (if he can’t come home for lunch). It makes a great brown bag lunch and it’s so healthy!
We thoroughly enjoyed this sandwich. It was packed full of flavor! The red peppers were super yummy!
The magazine has a ton of great tips in it, for saving money or time (both things I love to do). There were couple tips like: buy precooked hard boiled eggs, saves a lot of time! Or adding a simple salad with lettuce, radishes and avocados really adds to the meal. It’s also great to look through when you’re planning your weekly meals.

Yum! My kids are generally pretty picky, but I think it's funny that they like blue cheese! I know I'd love these sandwiches, maybe they would too!
