The school year is in full swing and we are starting to get the hang of school and all the chaos that goes with it. I am really enjoying having my kids back on a routine again and they are all enjoying school. Even though we all are used to school and everything, mornings are still very frantic and crazy! My kids are NOT morning people at all and sometimes they get up late, like 15 minutes before it’s time to leave the house. Plus this year my oldest is in 7th grade, which means that he started school sports and the past two weeks he has had early morning practices (they start at 6:30am….) and so that has added to our stress in the mornings. Since I of course want my kids to have breakfast in the mornings, I decided to make up a couple batches of this amazing banana bread/muffins to make our mornings run a little more smoothly. They are super easy to make, plus my kids LOVE them!
I headed to Winco to get all the ingredients to make the banana bread and muffins. I got some Gold ‘n Soft spread for the recipe, I found it in the refrigerated section with the other dairy products.
There are a few kinds of Gold ‘n Soft, I got the regular spread in both a small and large square container. There are also different kinds of blends and a light kind too.
This is the best banana bread and muffins ever. My mom used to make these for me when I was growing up and I LOVED them! So I love making them for my kids because it brings back so many memories of my childhood, my mom and baking with her. My mom would bake several batches of these muffins and then would freeze them so we could snack on them through out the week/month. It was such a fun treat and now I do that with my kids. I love making the banana bread but the muffins are so great to freeze or you can even put them into their school lunches or they make a great after school snack.
Now for the recipe. The recipe is super easy to make and chances are you have all the ingredients on hand (those are my favorite recipes).

You're making my mouth water! I've never heard of that butter? Is it a light butter or margarine or is it real butter (liked whipped butter?). Love the black bananas — I have a freezer full of them that I need to use up!
