Chicken Egg Rolls

I have been on a fried food kick lately.  Maybe it’s because I don’t care as much about what I eat when I’m pregnant.  I figure if I’m going to gain weight anyway, I might was well enjoy it . 
These egg rolls are super yummy and super easy to make.  You could make them as a appetizer or as the main dish.

This is what you’ll need
1 to 2 packages of egg roll wraps
2 packages of coleslaw
4 chicken breast, cooked and cut up
1/2 cup green onions
1 1/2 Tbsp wok oil
2-3 Tbsp soy sauce
1) Sauté coleslaw, green onions, oil and soy sauce until tender
2) Add chicken and cook until warm and blended
3) Wrap in egg rolls and then fry in oil until golden brown.
You can even freeze these (before frying).
Serve with sweet and sour sauce.

    These look so good! With Lent coming up I'm looking for easy dishes I can make for lunches that aren't PB & J, grilled cheese or tuna. Just leave out the chicken, maybe make some fried rice (with lots of veggies!!) to eat with it! Perfect! Thanks for sharing! I'm pinning!

    These look good! I usually add pork sausage to mine and bake them. They're never as good as the fried ones though!!

    Oh my goodness these look so yummy! We have been invited to friends house for Chinese New Year on Sunday and I think I might make some of these to take with us…
