Minestrone Soup

October 16, 2013 by Kaysi 1 Comment

It’s officially soup season!!  We don’t love soup in our house.  My husband doesn’t care for it.  And I like soups that have more than just broth.  But this is one soup that I love.  It was one that I grew up with and it super yummy!
minestrone soup
This is what you’ll need:
1 pound hamburger
1/2 cup celery
1/2 cup green pepper
1/2 cup onion
2 15oz cans diced tomatoes
1 8 oz can tomato sauce
4 cups water
2 carrots, sliced
1 cup beef broth
1 tbsp parsley
1 tsp oregano
1/2 tsp basil
 1/2 tsp garlic salt
1 can green beans, drained
1 can kidney beans, drained
3 cups Rigatoni noodles
1) Brown hamburger with celery, onion and green peppers
2) In a large pot, add all ingredients except pasta and bring to a boil.
3) Add pasta and cook for 15-20 minutes.

Oh yum! I love Minestrone soup but I've never made it. I figured it would have some ingredient that was hard to find in it. Now that I know better, I will make it! Thanks for sharing a great recipe! I'd like to share it on my blog next week if you don't mind?
