October 23, 2013 by Kaysi 1 Comment

This is one of recipes that I loved growing up.  It’s so easy to make and so yummy!
mini cream cheese cakes
What you will need:
2- 8 oz cream cheese, softened
3/4 cup sugar
1 tsp vanilla
vanilla wafers
1 can fruit filling
1) Place vanilla wafers in the bottom of a cupcake liner
2) Mix and beat the cream cheese, vanilla and sugar
3) Fill cupcake liners and bake at 375 degrees for 12 minutes

4) Let cool and then add a spoonful of your favorite fruit topping.  Can be cherry, strawberry or blueberry pie filling.

I would love it if you followed along.

I make these all the time but crush up the vanilla wafers to make the crust and make a homemade raspberry sauce for the topping. They are always a hit at parties… And ps I nominated you for a sunshine award. http://www.playpartypin.com/2013/10/you-are-my-sunshineaward.html
