Nacho Chicken Recipe- Super Easy and Kid Friendly

Each one of my kids have their favorite dish, you know that one that they just love and could eat every week.  Well my 9 year old son is obsessed with this dish.  He loves nacho chicken and he gets super excited when I am making it (sometimes he doesn’t leave my side while I am cooking it because he likes it that much!).  This recipe is a nice go to recipe because there are not very many ingredients and the ingredients are easy to always have on hand.

 Just for fun, here is a video to show you how to make nacho chicken with an Instant Pot 🙂

This is what you’ll need to make nacho chicken

Cook Time 25 minutes
Total Time 50 minutes
Servings 8 people

Ingredients

  • 1 bag tortilla chips
  • 3-4 chicken breasts cooked, diced
  • 1 can cream of chicken soup
  • 1 can evaporated milk 5 oz can
  • 3-4 green onions diced
  • 1 cup fiesta cheese
  • 1 can diced green chile peppers

Instructions

  1. Combine soup, onions, chile peppers, milk and 2/3 cup of the cheese in a bowl and mix. 

  2. Place crushed tortilla chips onto the bottom of a casserole dish.  Then add 1/2 the chicken and 1/2 the sauce. 

  3. Add another layer of chips, chicken and sauce into casserole dish. 

  4. Add remaining tortilla chips and 1/3 cup of cheese. 

  5. Bake in oven at 350* for 30 minutes. 

This meal is great by itself or you can easily add salsa or tomatoes with it to give it a little more flavor.  Another thing that you can do is add rice to it, that is a great way to make it go further (like if you are making it for more than just one family, or a really big family).  We are a family of 7 and this feeds us all well and my kids go for seconds too!
