Each one of my kids have their favorite dish, you know that one that they just love and could eat every week. Well my 9 year old son is obsessed with this dish. He loves nacho chicken and he gets super excited when I am making it (sometimes he doesn’t leave my side while I am cooking it because he likes it that much!). This recipe is a nice go to recipe because there are not very many ingredients and the ingredients are easy to always have on hand.

This is what you’ll need to make nacho chicken
Prep Time 25 minutes
Cook Time 25 minutes
Total Time 50 minutes
Servings 8 people
- 1 bag tortilla chips
- 3-4 chicken breasts cooked, diced
- 1 can cream of chicken soup
- 1 can evaporated milk 5 oz can
- 3-4 green onions diced
- 1 cup fiesta cheese
- 1 can diced green chile peppers
Combine soup, onions, chile peppers, milk and 2/3 cup of the cheese in a bowl and mix.
Place crushed tortilla chips onto the bottom of a casserole dish. Then add 1/2 the chicken and 1/2 the sauce.
Add another layer of chips, chicken and sauce into casserole dish.
Add remaining tortilla chips and 1/3 cup of cheese.
Bake in oven at 350* for 30 minutes.
This meal is great by itself or you can easily add salsa or tomatoes with it to give it a little more flavor. Another thing that you can do is add rice to it, that is a great way to make it go further (like if you are making it for more than just one family, or a really big family). We are a family of 7 and this feeds us all well and my kids go for seconds too! It’s just so good :).
